low-fat cheddar chowder

Ingredients
Heat water in larg pot. Add potatoes,cauliflower,celery,onions,salt,pepper. Cover and cook over medium -high heat for 10 minutes. DO NOT DRAIN. In a medium sized pan,melt margarine then add flour. Slowly addilk while whisking mixture. Allow the sauce to thicken, then add to the veggie mixture. Slowley stir in the cheddar until melted. Do not bring soup back to boil. You can serve immediately if you like, transfer the soup to slow cooker and leave it on low until ready to eat. 6 servings
