Mediterranean Salad w/ Grilled Eggplant

Ingredients
* bulgar, cracked-wheat, 1.5 cup * boiling water, 1.5 cup * Olive Oil, 2 tbsp * Black Olives, 10 jumbo, sliced * Eggplant, fresh, 2 cup, sliced thin * Feta Cheese, .33 cup, crumbled * Cilantro, raw, 3 tbsp chopped * Lime Juice, .33 cup
Directions
In a bowl add boiling water to bulgar and let sit until all water is absorbed. Fluff with a fork. Add lime juice, chopped olives and cilantro to bulgar and mix well. Season with salt/pepper to taste.

Grill eggplant and toss with feta and olive oil. Add to bulgar mixture.

Serving size approx 1 cup. Serve with lime wedges.
