Oatmeal Raisin Cookies

1 1/2 cups sifted all-purpose flour1 teaspoon baking soda1 teaspoon ground cinnamon1/2 teaspoon salt 2 sticks of unsalted soft butter1 cup firmly packed brown sugar1/2 cup granulated sugar2 eggs1 teaspoon vanilla extract3 cups uncooked old fashioned Quaker oatmeal 1 cup dark seedless raisins1 cup coarsely chopped walnuts .
Preheat oven to 350F
Mix shifted flour, baking soda, cinnamon and salt in a large bowl.
In another bowl with a electric mixer beat the margarine, brown sugar and granulated sugars at high speed until creamy, beat in eggs and vanilla.
Mix dry and wet ingredients with clean hands, add oats and raisins, (if you like add walnuts or the dry fruit or chocolate chips).
On a cookie sheet lined with parchment paper drop cookie mixture, 2 inches apart. You can use an ice cream scooper to drop the mixture.
Bake 10 - 12 minutes until pale golden brown.
Cool for 1 minute on baking sheets, the place on wire rack to cool, Store airtight.
