Sugar & Gluten free Pancakes

Ingredients
Steel Cut Oats, dry, 1 cupRice flour, brown, .75 cup Whole Grain Millet Flour, .5 cup Whole Grain Barley Flour, .75 cupWater, tap, 2.5 cup (8 fl oz) (can use milk)Egg large, 2 Salt, 1 tspBaking Powder, 2 tspOlive Oil, 3 tsp Stevia packets Pure Coconut Oil, 2 tbsp (used in the pan for cooking)Whole Ground Flax Seed Meal, 3 tbsp (sprinkled on top)
Directions
Cook the steel cut oats overnight in crock pot on warm.
Add in all flours and rest of water (appx 1 cup)
add eggs and mix with fork
Add remaining ingredients, keeping flax raw for a topping.

Serving Size: 4 1/2 cups makes 18 1/4 cup pancakes. Serves 4-6
