Chick Peas and Tuna Salad

Ingredients
* *Chick Peas, 3.5 cup (remove) * Olive Oil, 1 tbsp (remove) * Peppers, sweet, red, raw, sliced, .125 cup (remove) * *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove) * Mestre Alfredo Atum, 14 oz (Tuna Fish) * Mixed Vegetables, frozen, 1 package (10 oz) (remove) * *Del Monte Cut Green Beans, .5 cup (remove) * *Lawry's Taco Seasoning, .25 tsp (remove) * Onions, raw, 8 slice, thin (remove)# Ken's Steak House, Lite Raspberry Walnut Vinaigrette Salad Dressing, 2 Tbsp, 1 serving (remove)
Directions
Heat oil in a large skillet over medium heat. Sauté shallot/onions until fragrant. Add remaining ingredients except tuna stir into skillet. Wait until the vegetables/potatoes cook than add tuna last. Season with Lawry's Taco Seasoning. Reduce heat, cover, and simmer for 18 to 20 minutes.
Stir and serve, over white long grain Rice.

    This was a simple dish to make, and LOOKS better than it tastes, in my opinion. I felt like it needed some sort of sauce or broth to make it more enjoyable-- chick peas are very dry by nature. On the plus side, it's a filling dish with lots of veggies. Not sure I'll make it like this again. - 11/1/10

    This was so easy to make and so tasty! I had to omit the frozen vegetables and only used one can of tuna. My skillet wasn't big enough. I also used Taco Bell taco seasoning, since our grocery didn't have the suggested brand. Great way to get your veggies! Will definitely make again. - 4/25/08
