Crustless Mini Ham Quiche

Ingredients
1/2 Yellow Onion, diced3 Green Onions, diced6 Mushrooms, chopped1 teaspoon olive oil1/4 lb. (about 4 slices) low fat Ham, diced1/4 teaspoon dried Basil1/4 teaspoon dried OreganoDash of Black Pepper5 Eggs1/3 cup Tomato, diced1 cup Shredded Cheddar Cheese
Directions
Preheat oven to 350 F.

Saute onions in olive oil till golden.

Add mushrooms and saute 1 minute more.

Add chopped ham and saute another minute more. Set aside to cool.

Mix all ingredients together. Be sure veggies and ham mixture has cooled slightly before adding to egg mixture. Spoon into lightly greased muffin pan. Bake for 30-35 minutes or until centers are firm. Makes 12 servings..
