Turkey Bean and Green Stoup

Ingredients
2 cups fresh greens (kale, collard) - stems removed and roughly chopped1 medium yellow onion, chopped1/2 Tbsp extra virgin olive oil4 cups roast turkey meat, cubed1 can (15 oz) white kidney (cannellini) beans4 cups chicken broth or stock2 Tbsp lemon juice1 tsp ground turmeric1/2 tsp dried thyme (or 1 tsp fresh thyme)salt and pepper to taste
Directions
Bring large pot of water to a boil. Drop the chopped greens into the boiling water and blanch for 5 minutes. Drain greens into colander. Put pot back on stove and add olive oil. Saute onions in olive oil until the onions become translucent, then add greens back to pot.

Add remaining ingredients and cook over medium heat until hot.

Serving Size: Makes 8 1-cup servings
