1/2 cup cashews, 1 head roasted garlic - with ~1 tbsp olive oil 2 cloves fresh garlic1/4 cup capers, with some brine3/4 cup waterSeveral dashes fresh black pepper1/2 teaspoon salt2 tablespoons nutritional yeast2 tablespoons grapeseed or olive oil1/4 cup fresh lemon juice
Soak the cashews for at least 2 hours and drain. Preheat oven to 400 degrees F. Peel most the skin off of the garlic cloves (without separating the cloves) and cut the top off the head of garlic, exposing the tops of all the cloves. Drizzle olive oil on top of the garlic and wrap in aluminum foil and place in the oven. Bake for approximately 45m -1.5 hrs until soft and golden.
Peel the roasted cloves and raw cloves and mix everything in a food processor until creamy.
Serving Size: good for approximately 3-5 large salads or wraps
