Gimme Lean! Vegetarian Meatloaf

Cooking spray1 onion, chopped1 pkg. Gimme LEAN! Ground beef style4 slices whole-wheat bread1/2 C soy milk1 egg white, lightly beaten2 TB Parmesan Cheese1/2 Teas garlic powder1/2 Teas Dried Basil1/4 Teas dried thyme leaves1/4 Teas ground pepper
Preheat oven to 350 and spray an 8x5 loaf pan with cooking spray. Cook the onion in cooking spray until soft, 4-5 min.
In a medium bowl, combine the "meat," onion, bread crumbs, milk, egg white, ketchup, cheese, garlic powder, basil, thyme and pepper; blend well. Shape into loaf and transfer to pan. Bake until cooked through 45-50 minutes.
