Chicken Vegetable Soup

Ingredients
Directions
Lots of chopped veggies - your choice1 large sweet potato1 cup cooked quinoa1 large onion1 leek6 cloves garlic, chopped4 med - large chicken breasts - roasted or boiled3 quarts chicken stockherbs and spices to taste.
Boil chicken in water (use water for stock) or roast breasts.
Chop all veggies in medium pieces.
saute onion, garlic and leek until soft. Add to stock.
Shred chicken, add to stock. Add in additional stock.
Add veggies and herbs. Bring to a boil,
Cook on low (the soup should simmer) for 4 hrs.
Serving Size: makes 32 1.5 cup servings
