Celery Root Salad

*celeriac (celery root), 4 cup *Daisy Light Sour Cream, 32 tbsp (1- 8 oz container)Parsley, 2 tbsp, choppedSalt, 1 tsp Pepper, black, 1 tsp
Trim off gnarly parts of celery root. Cut root in half (may need to cut into 4 pieces if root is particularly large). Boil until tender and easily pierced by a fork. Remove from water and let cool.
Peel outside skin off root and shave into thin slices. Add 1 eight oz container of light sour cream, chopped parsley, salt, and pepper. Stir together well. Sour cream should coat celery root but not overwhelm it. Refrigerate overnight. Serve cold.
