SBs Turkey Loaf

Ingredients
1 c. mushrooms, chopped1 c. sweet peppers, chopped1.25 lb. ground turkey2 eggs1/4 c. ketchup + 1/4 c. ketchup3.5 oz. or 99.2 g, pork rindsseason to taste with black pepper, garlic powder, Italian seasonings, and salt
Directions
Sautee mushrooms and sweet peppers. You can add 1/4 of an onion as well. Transfer to bowl to cool. Mix eggs with ketchup, black pepper, garlic powder, salt, and Italian seasonings then pour over ground turkey. Mix well with your habds. Let mixture set while you grind the port rinds into fine crumbs. Mix pork rinds with turkey mix. Let sit 10 minutes. Place meat loaf into a skillet or loaf pan. Pour rest of ketchup on top of meat then bake in a 350 degree over for 1 hour.
