Vegan Beet Burger

Ingredients
1-1/4 brown rice, cooked1 c lentils1 cup fresh beets, peeled and shredded1/2 tsp saltblack pepperthyme (I've used Herbes de provence in the past, and it's been fine)1/2 tsp fennel1 tsp mustard powderonion, grated2 cloves garlic, minced1 tbs almond butter (I've substituted peanut butter in a pinch)1/2 c dried breadcrums
Directions
Peel and shred beets in food processor. Replace shredder with chopping blade. Add beets, rice, lentils, fennel, and pulse til it resembles hamburger. Add remaining ingredients. Let sit about a half-hour before cooking in cast iron skillet. Sear each side to make it crispy on outside.
