No bake cheesecake

2 blocks of fat free cream cheese (8 oz. each)1/4 cup sugar or Splenda1 tub fat free or lite Cool Whip (8 oz.)2 tbsp vanilla extract1 graham cracker pie crust (9")2 cups of strawberries (optional)
1. Mix softened cream cheese, sugar, vanilla extract and cool whip together in a large bowl. There will be some lumps because of the reduced fat ingredients.
2. Pour mixture into graham cracker crust (I use a lower fat crust to reduce calories).
3. Cover crust and place in fridge for at least two hours.
4. Garnish the top of the cheesecake with strawberries. (or leave the berries out to save calories)
Makes 8 large servings or 12 modest servings.
