Crockpot Eggplant Sauce

Ingredients
1 medium eggplant, peeled & cubed1 can (28 oz) crushed tomatoes2 cans (15 oz) diced tomatoes1 can (6 oz) tomato paste1 tbsp garlic powder1 1/2 tsp oregano1/4 cup balsamic dressing1/4 cup water
Directions
Mix all ingredients in your crockpot. Mix well, cover and cook 7-8 hours at Low. Serve 1/2 cup over 1 cup pasta (not included in ingredients). Garnish with chopped kalamata olives, pine nuts and/or cheese, if desired.
