Cucumber-Radish Salsa

Ingredients
Cucumber (peeled), 1.5 medium Radishes, 6 medium (3/4" to 1" dia) Onions, raw, .5 cup, chopped Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) *Lemon Juice, 2 wedge yields Salt, .25 tsp Pepper, red or cayenne, 1 tsp Pepper, black, 1 tsp Oregano, ground, 1.5 tbsp
Directions
Peel, seed, and chop cucumber. Place in a colandar. Sprinkle with salt and stir to mix thoroughly. Let drain. While cucumber is draining, slice and roughly chop radishes. Press gently but firmly between papertowels to rid of excess moisture. Chop onion. Seed and chop tomato. Combine all in medium bowl. Add squeeze of half a lemon, quarter tsp of salt, 1 tsp. ground red pepper, 1 tsp. fresh ground pepper, and 1.5 tbsp. of oregano. I use mexican oregano for this dish. Alternately, fresh oregano, or fresh cilantro would be a nice addition as well. This is great when paired with spicy pork chops.
