Jeni's Crockpot Red Beans and Rice

1 bag red beans2 packages Smoked Turkey Sausage (sliced)1 can stewed tomatoes1 sweet yellow onion (chopped)1 cup assorted bell peppers (chopped)Cajun seasoning (to taste)Serve over cooked brown rice (approx 1/2-3/4 cup per serving)
Rinse red beans thoroughly. Put all ingredients in crock pot except the rice. Fill crockpot with enough water to cover the ingredients completely with an additional several inches of water above. Set crockpot to warm. Check water level and stir at the half way point (about 8 hours). Leave crockpot on warm and cook an additional 4 hours and stir again. Taste to see if you need additional seasoning. Cook a final 4 hours and red beans and rice will be done.
