Mediterranean Chicken Salad

Ingredients
1 cup of light mayonnaise1/2 cup fresh basil leavesjuice of 1/2 lemon1/2 cup plain yogurt2 cups poached chicken breast1 cup cooked and pealed potato1 red pepper, diced1 green pepper, diced1 yellow pepper, diced1/2 cup black olivesseason to tasteBasil sprigs for garnishPuree the mayonnaise and basil in a blender or food processor. Add lemon juice. Scoop into a large bowl, stir in the yogurt and mix well. Fold in the remaining ingredients. Cover and chill for at least 3 hours to allow the flavors to mellow.
Directions
You may use leftover baked chicken for the recipe, but poaching chicken helps to retain the moisture in the meat.
