2 cups zucchini, sliced into quarter in rounds2 Tbsp. Panko bread crumbs2 Tbsp. Grated Parmesan Cheese1 Tbsp. Olive oilsalt and pepper to tastePreheat oven to 400Pour oil into a ziplock bag. Add the zucchini and be sure each round has a light coating of oil. Mix the bread crumbs, cheese, and seasonings in a bowl.Place the rounds into the bowl a few at a time and coat with mixture. Pressing to adhere. Coating will be light.Lay out the rounds on a foil covered cooking sheet in a single layer. Sprinkle remaining crumb mixture over the rounds.
Bake for about 22 - 27 minutes, until golden brown. There is no need to flip them during baking - they crisp on both sides as is.
