One Pan Mexican Quinoa

Ingredients
1 tbsp. olive oil2 cloves garlic, minced1 jalapeno, chopped1 cup quinoa1 cup vegetable broth1 (15 oz) can black beans, drained and rinsed1 (14.5 oz) can fire-roasted diced tomatoes1 cup corn kernels1 tsp chili powder1/2 tsp ground cuminsalt and pepper, to taste
Directions
Heat olive oil in pan, add jalapeno and garlic, cook until fragrant, about one minute. Add quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin. Season with salt and pepper, if desired. Bring to a boil, reduce heat and simmer until quinoa is cooked, about twenty minutes.
