Italian Eggplant with Tomatoes

Ingredients
1 large onion1 eggplant1 can Italian tomatoes1 can mushrooms1.5 T minced garlic1 T black pepper
Directions
Carmelize onions in non-stick pan
Placed cubed eggplant in pan and carmelize them a bit
Put 1/2 cup water in pan and cover
Steam onions and eggplant 5-10 minutes until eggplant is tender
Put canned tomatoes, mushrooms and garlic in pan and stir
Add black pepper to taste
Let simmer for 5-10 minutes to blend flavors
