Momritz's Minestroni Soup

Ingredients
1 large onion, diced 4 medium carrots, chopped 3 medium celery stalks, diced 4 slices turkey bacon, diced 2Tsp virgin olive oil 4 cloves garlic, minced 1 medium baby zucchini, sliced 1 8 oz can kidney beans including water1 8 oz can chick peas including water 1 8 oz can black beans including water1 15 oz can stewed tomatos, chopped 1 8 oz can tomato sauce 4 Cups chicken broth 4 Cups water 2 tsp dried oregano 1 cup shredded cabbage
Directions
saute' bacon, onion, carrots and celery in oil until vegies are tenders
stir in garlic and zucchini - cook together several minutes
add rest of ingredients
bring to boil
reduce heat and cook at least 1 hour or up to 5 hours.
add cabbage and cook 30 minutes before serving
