Chick Pea chocolate chip cookies

Ingredients
1 1/4 cups canned chickpeas, well-rinsed and patted dry with a paper towel2 teaspoons vanilla extract1/2 cup + 2 tablespoons of prepared PB2 (In the ingredient list I estimated about 12 T would make 1/2 cup + 2 T of peanut butter. I didn't measure it when I mixed it, sorry. I'll edit it once I get specific amounts.)1/4 cup honey 1 teaspoon baking powdera pinch of salt 1/2 cup chocolate chips
Directions
Preheat your oven to 350°F / 175°C.
Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth.
Mix in chocolate chips.
Drop by spoonfuls onto a piece of parchment paper. If you want them to look more like normal cookies, mold them into somewhat flattened balls. They really don't change shape as they bake. Bake for about 12 minutes.
They will be very soft.
Yields about 1 1/2 dozen average size cookies.


Serving Size: Makes about 1 1/2 dozen 1.5 inch cookies.
