Pork/Shrimp in Egg Nets

Filling:4 cilantro roots2 garlic cloves10 white peppercorns (I use black)pinch of salt3 T oil1 small onion, finely chopped4 oz lean ground pork3 oz shrimp, chopped1/2 c roasted peanuts, ground1 tsp sugarfish sauce to tasteNets:6 eggscilantro to garnish
Heat 2 T oil, add cilantro, garlic, peper, and salt (all crushed and almost as a paste). Fry till fragrant. Add onion and cook till softened. Add pork and shrimp and fry till meat cooked. Add peanuts, sugar, and fish sauce. Stir and cook until a little sticky. Set aside.
Beat eggs with a fork. Grease pan with remaining oil. Try to dispense the eggs into a criss cross net pattern into a 5 inch circle. (I've never been able to do this so I just do a real thin egg layer). When egg is set, remove it and repeat with all the eggs.
Lay a net on a board and spoon in some filling. Turn in the edges to make a square. Garnish.
