Kale Chicken & Quinoa Soup

Ingredients
T EVOO1 carrot1 rib celery1/2 medium onionsalt/pepper to taste4 cups kale (torn)1 garlic clove8 cups chicken broth1 tsp parsley flakes1/2 tsp thyme1 bay leaf2 large chicken breast (cut in half)1 large sweet potato (skinned and cubed)1 large russet potato (skinned and cubed)2/3 quinoa (rinsed and drained)1/4 cup grated parmesan cheese
Directions
Heat oil in large soup pot, add carrot, celery, and onion. Season with salt. Saute 10 minutes. Add kale, garlic and season with salt. Saute for 2 minutes. Add 7 cups of broth ONLY, parsley flakes, thyme, bay leaf, and bring to a boil. Add chicken breasts and cook for 10 minutes. Remove to plate to cool. Add potatoes and quinoa and bring to a boil. Place lid, lower heat, cook for 10 minutes. Shred chicken. Add chicken and parmesan, salt and pepper to taste if needed. Add remaining broth.
