1 c. Atkins All-Purpose Baking Mix1.5 c. Almond/Coconut Milk (unsweetened)1 egg2 t. baking powder1/4 t. salt1 Splenda packet -or-5 drops of EZ Sweetz
1. Whisk baking mix, salt and baking powder together. Briefly whisk egg separately, then add along with milk.
2. Stir til well blended. Let sit 5 minutes to let baking powder kick in while you heat griddle.
3. Heat griddle -- your choice: Add oil to prevent sticking or skip if you have a good quality non-stick. (No oil calculated into nutrients.)
4. Cook as normal pancakes. Makes about 10 Pancakes.
Serving Size: Makes 10 pancakes. Nutrients based on ONE pancake.
