Lentil Fajita Soup

Ingredients
1/4 c. Onions, raw chopped1/4 c. Celery, raw diced1/4 c. Carrots, raw chopped1/2 c. Lentils2 tbls. Salsa2 tbls. Yogurt Plain Greek Yogurt, non-fat2 tsp. fajita/cajun seasoningsalt & pepper to taste
Directions
Place vegetables and lentils in a pan and cover with approximately 2 c. water. Add salt, pepper and seasoning. Cover and cook about 30 minutes, or until lentils are cooked to desired consistency. Dish it up and garnish with 2 tbls. of salsa and yogurt-enjoy!
