Potato Soup

Ingredients
6-8 potatoes cut into 1/2 inch6 carrots, chopped2 red bell peppers, chopped1 onion, chopped3 cups frozen corn3 tsp thyme3 tsp cumin2 tsp pepper2 tsp salt2 bay leaves12 cups vegetable broth
Directions
Put all vegetables and spices into a dutch oven to cook for 15 minutes. Add vegetable broth and bring to boil. Cook for 1 hour stirring occasionally. Remove soup from heat and put 3/4 in a blender to bring it to a creamy texture. Add back to pot and simmer for another 15 minutes. Enjoy!
