3 Zucchini, sliced1 Large can diced tomatoes1 Onion, sliced4 Cloves garlic, minced1 Sweet Red Pepper, chopped
- Prepare vagetables
- Saute onion and garlic in 1/4 cup of water until onion is beginning to become tender
- Add diced tomatoes and red pepper, heat through.
- Add zucchini and cook on low heat until zucchini is at desired tenderness.
Makes approx 8 (1 cup) servings
