Egg Muffins

8 eggs1/2 cup skim milk1/4 bell pepper, chopped2 tbsp. Hormel Bacon bits2 oz ham (I used Dietz & Watson, low sodium)2 tbsp. pico de gallo1/2 cup cheddar cheesehandful of baby spinach
Spray a muffin tin generously with non-stick cooking spray.
Place add ins into the bottom of the muffin tins. I used pico with bacon and cheddar, and then another set with bell pepper, spinach, ham and cheddar. Mix the eggs and milk, and pour egg mixture evenly into the muffin tins.
Bake at 350 degrees for approximately 20-25 minutes.
Serving Size: Makes 12 muffins
