Preheat oven to 250 degrees.
Over medium low heat: Melt butter, add brown sugar and stir until melted. Cook for about 5 minutes stitring often. Dont let it bubble over, don't let the caramel get too dark or over cook.
While the caramel is cooking, pop your popcorn.
Add salt, baking soda and vanilla to caramel, then put popcorn in baking dish and pour caramel over the popcorn. Stir til most of the popcorn is coated.
Bake in oven and stir every 15 min. Should be ready in 45-60 min.
