2 lg boneless, skinless chicken breasts (8 oz ea)32 oz reduced sodium chicken broth1 pkg McCormick original taco seasoning2 tbsp. chili powden1 can black beans(drained and rinsed)1 can dk red kidney beans(drained and rinsed)2 cans Ro-Tel diced tomatoes with green chili or 1 each of the diced tomatoes with green chili and 1 diced tomatoes with cilantro and lime1 sm can tomato paste2C or 1sm bag of frozen yellow or white corn
place chicken breasts on bottom of the crock pot
put all remaining ingredients on top of the chicken. Cover and set crock pot anywhere from 4-8 hrs depending upon your temperature setting.
When done, remove the chicken and simply shred with a fork and put back in soup.
