Spinach Mushroom Cheese Frittata

Ingredients
6 mushrooms sliced1 bag Aldi's little salad bar flat leaf spinach2 wedges Happy Farms Garlic & Herb cheese5 egg whites1 tsp olive oilSalt and Pepper to taste.
Directions
Lightly oil a 13" skillet. Saute mushrooms and spinach. Add cheese and allow it to "melt" into the spinach and mushrooms. Beat 5 egg whites and pour over the spinach, mushroom, and cheese mixture. Once bottom is set, place pan in the oven under broiler. Cook until top is set. Serves 2-4 depending on appetite.
