Ingredients
4 medium tomatoes, diced small1/2 large red onion, diced1/2 large green bell pepper, diced1 jalapeno pepper, diced fine1/8-1/4 cup lime juice1/2 -1 bunch fresh cilantro, chopped smallsalt to taste
Directions
Mix all ingredients in large bowl. Refrigerate 1 hour, then drain and put in lidded container and keep in refrigerator. May need drained every 1-2 days.

Serving Size: Makes 12 1/2 cup servings. For the detail oriented among us a 1/2 cup serving weighs between 82 and 86 grams.
