Green Greek Pasta Salad

Ingredients
2.5 cups catelli smart pasta (about 5 cups when cooked)1 cup frozen baby peas1 english cucumber, diced1 Med. Green Bell Pepper, dicedFeta Cheese, 100 grams 1 cup sliced black olives1 Tbsp Avocado Oil 2 Tbsp Olive Oil 4 Tbsp red wine vinegar1 tsp salt1/2 tsp coarse ground pepper2 tsp dried oregano1 clove garlic, minced
Directions
Cook the pasta al dente, rinse under cold water, and drain well. Add the frozen peas (do not cook), chopped green pepper, chopped cucumber, black olives and feta cheese. Make a dressing of the oils, vinegar and spices, and pour over salad. Mix well.

Serving Size: Makes 12 cups or 6 2-cup servings
