German Cucumber Salad

SALAD2 large cucumber, peeled and thinly sliced1 small onion, peeled and thinly sliced3 small roma tomatoes, thinly slicedDRESSING1/3 cup low-fat sour cream1/4 teaspoon Dijon mustard1 tablespoon white vinegar2 tablespoons low-fat milk1/2-3/4 teaspoon sugar1 tablespoon chopped fresh parsley2 tablespoons chopped fresh dill1/4 teaspoon pepper1/4 teaspoon salt, to taste
Place the cucumber, onions and tomatoes in a large bowl. Set aside. In a small bowl, whisk together all dressing ingredients. Pour over salad mixture. Toss to coat well.
Chill at least 2 hours before serving.
