vegetable cheese omelett

Ingredients
leeksbrocolligreen beanscauliflowerolive oil1 egg3 egg beaters4 egg whites2 tbs asiago1/4 cup fat free cheddar cheese
Directions
I used roasted cauliflower from the night before. I sauted leeks in 1 tsp oil . Beat eggs and egg substitute togeter. Pour over leeks. Salt and pepper. Add cauliflower, steamed brocollo and steamed green beans. Let egg mixture cook then add cheese and place under broiler until cheese melts. Divide into 3 wedges
