Ingredients
2 eggsOne Anduille chicken sausage chopped into 1/2 inch cubesOne small potato chopped into 1/2 inch cubesHalf a zucchini chopped into 1/2 inch cubes 1 tbls canola oil Salt pepper garlic powder to taste
Directions
In a cast iron skillet cook potatoes in oil, add salt and pepper after 5 minutes. While potatoes cook add salt, pepper, and garlic powder to the zucchini and let sit. Once potatoes are crispy add sausage and zucchini.
Cook until everything is golden brown. Crack both eggs into the skillet and continually stir until cooked.
