ADL Tofu Scramble

4 tomatoes, diced1 tablespoon garlic powder1 tablespoon Italian seasoning1 tablespoon ground turmeric32 oz extra firm tofu, drained1 onion, diced1 red bell pepper, diced1 cup mushrooms, diced0.5 cup nutritional yeastsalt to taste
Drain tofu and set aside in towels for at least 30 minutes before making recipe.
-- Dice tomatoes and remove seeds/liquid.
-- Dice other veggies.
-- In bowl, combine garlic powder, Italian seasoning and turmeric.
-- Crumble tofu into the bowl and mix to combine. Set aside.
-- Spray large skillet with extra virgin olive oil cooking spray. Heat over medium heat.
-- Sauté chopped onion about 5 minutes.
-- Add tomatoes, peppers and mushrooms and sauté about 5 minutes.
-- Add tofu and nutritional yeast and sauté about 5 minutes, stirring frequently.
-- salt to taste
