Yummy Couscous, Beet, Avocado Salad

Ingredients
1 cup Spinach1/4 cup Micro Greens or Sprouts2 Medium sized mushrooms (Chopped)2 Small boiled Beats (Chopped/Sliced)1/2 Tbsp Nutritional Yeast10 Almonds1/4 slice of Avocado1/4 cup cooked whole wheat couscous
Directions
Layer the salad however you like or toss it.

I like to use israeli whole wheat couscous and cook it with fresh herbs or lemon pepper/cilantro/no salt seasoning and vegetable broth. Instead of a dressing. It remains low fat and high taste.
