Spinach, mushroom, green pepper and cheese omelete

3 large eggs3 oz sliced mushrooms1 fresh spinach1/2 c chopped green pepperscooking spraysalt and pepper1 slice American cheese
Saute mushrooms and green peppers in non stick pan with cooking spray until softened. Add spinach and cook until wilted.
In medium size non stick pan sprayed with cooking spray, pour beaten eggs . Cook until lightly set, raising the edges and letting the egg run around. Put veggie mixture on top of one side, top with cheese, flip other side over and let cheese melt. Cut in half and serve.
Serving Size: makes 2 servings 1/2 each
