Beer Cheese Fondue

10 ounces (2 1/2 cups), shredded sharp Cheddar6 ounces, Gruyere, shredded1 tablespoon flour1 cup beer (I use Franconia Kolsch)1 teaspoon spicy brown mustard1 clove garlic, sliced in half
Toss cheese thoroughly with flour.
Boil beer over medium heat. Reduce to a simmer and add cheese gradually while stirring. Once the cheese is fully melted, stir in the mustard.
Rub inside of fondue pot with garlic, then discard garlic. Transfer fondue to a warm fondue pot.
Serve with veggies, bratwurst, bread (I recommend sourdough with this one), and fruits (Granny Smith apples work well)
