Lemony Chicken Saltimboca (Cooking Light)

4(4-ounce) chicken cutlets1/8 tsp salt12 fresh sage leaves2 ounces thinly sliced prosciutto cut into 8 thin strips4 tsp EVOO1/3 cup FF low sodium chicken broth1/4 cup fresh lemon juice1/2 tsp cornstarchlemon wedges (optional)
sprinkle chicken with salt. Place 3 sage leaves on each cutlet. Wrap 2 prosciutto slices around each cutlet, securing sage leaves in place. Heat large skillet over medium hear. Add 1 Tbsp oil to pan and swirl to coat. Add chicken to pan. Cook for 2 minutes on each slice or until done. Remove chicken from pan and keep warm. Combine broth, lemon juice and cornstarch in small bowl and whisk until smooth. Add mixture an remaining tsp of oil to pan and bring to a boil stirring constantly. Cook for 1 minute or until slightly thickened, stirring constantly with a whisk. Spoon sauce over chicken. Serve with lemon wedges if desired.
