Reduced Sodium Italian Wedding Soup

Meatballs:1 lb. ground turkey1 egg1/4 c. Matzo meal1/4 c. onions, finely minced1/4 c. Parmesan Cheese, grated1 tsp. Italian Herb SeasoningSoup:1 T. olive oil1/2 C. onions, chopped1 tsp. minced garlic1/2 C. carrots, chopped1/2 C, celery chopped6 C. unsalted chicken stock1/2 tsp. salt1/4 tsp. pepper1/2 C. spinach, shredded2 oz. pastina
1) Mix all ingredients for meatballs and shape into tiny meatballs using a teaspoon. Set aside.
2) Saute onion and garlic in olive oil in the bottom of a stock pot or large cooking pot. Add celery and carrot and cook briefly.
3) Add chicken stock, salt and pepper. Bring to a boil.
4) When boiling, gently add meatballs and stir gently to keep them from sticking together. Reduce heat and simmer about 20 minutes.
5) Add pastina and spinach and cook until pasta is cooked. Serve immediately.
