Protein Pancakes

Ingredients
DRY 1 - egg substitute, 2 2/3 cups of fat free Greek yogurt, 4 tsp lemon juice, 3 tsp vanilla extract, 1/4c of water + 1/4 cup skim milk, WET4 tsp baking soda, a pinch of salt, 1 1/3c whole wheat flour, 4 tsp cinnamon.
Directions
Combine all dry ingredients together in a medium bowl, and all of the wet ingredients together in a separate bowl. Gently fold the dry into the wet until "just" combined. Cook 1/4 cup of batter for each cake on med-high heat in a slightly oiled skillet that has been sprayed with cooking spray.

Serving Size: Makes slightly larger than silver dollar size cakes, using . Our typical serving is four (4) cakes.
