Red Cabbage and Apples

1 -1 1/2 lbs red cabbage cored and roughly shredded4 TB oil2 - 2 1/2 cups peeled and chopped onions4 tart apples , peeled and coarsley chopped1/2 tsp saltground pepper optional
In a 4 quart pot, cover the shredded cabbage with boiling water and let stand for 15 minutes. Drain
Heat oil in a 12 inch skillet and cook the onions until they are very soft but not colored. Add the cabbage, apples, salt and pepper. Cover the skillet and cook over very low heat for 45 minutes until the cabbage and apples are soft
Yield 6 to 8 servings
