Not So Fried, Fried Rice

Ingredients
2 cups cooked long grain rice 3/4 c. frozen peas1 serving egg substitute1 egg1/4 cup chopped scallions4 slices of Canadian bacon-diced1/2 cup soy sauce1 T. grated ginger
Directions
Put rice on to cook. Scramble eggs in a non-stick pan with cooking spray. Put frozen peas on top of hot scrambled eggs. When rice is done add all ingredients to the rice and stir thoroghly. Adjust ginger and soy sauce to your liking. I've also substituted shrimp for the Canadian bacon, or just plain ham although Canadian bacon is a little leaner. The Hormel brand works well.
