Turkey Taco Lettuce Cups

Ingredients
1/2 cup chopped onions1 cup chopped bell peppers 1 cup shredded carrot 1/2 cup chopped mushroom 2 cloves garlic, minced 1 lb ground turkey2 teaspoons chili powdersalt and pepper to tasteromaine or iceburg lettucegreek yogurt, salsa and cheese for garnish (not included in nutritional calculation)
Directions
Over medium heat, cook onions, bell peppers, carrots, and mushrooms for two to four minutes until the carrots start to soften. Add the garlic.

In a separate pan (or after removing the vegetables), cook the ground turkey and cover it with two teaspoons of chili powder and salt and pepper to taste. Turn when browned. Once turkey is cooked, add the vegetable mixture and more chili powder if desired.

To assemble, place in to lettuce cups and top with toppings! Great with avocado, salsa, greek yogurt, cheese...
