Low Carb Potato Soup

Ingredients
1 (12 oz.) bag frozen cauliflower3 medium potatoes, diced (about 3 cups)1 yellow onion, diced1 garlic clove, minced1/2 cup milk1/2 cup cream3-4 cups chicken brothsalt and pepper to taste
Directions
boil the cauliflower, onion, and garlic in 2-3 cups of chicken broth. remove the solids and puree in a blender with the cream and milk. add the potato to the pot where the cauliflower-water/broth is reamining and cover with more broth. boil until tender. add the cauliflower puree to the potatoes and simmer for about 5 minutes. season and serve with optional toppings.
