Ingredients
1 Head Cauliflower2 tbsp water2 tbsp cottage cheese1 tbsp almond (or any milk)Salt and pepper to taste (.25 tsp added to this recipe)
Directions
Cut the cauliflower into medium size bunches and put in a 2 quart glass pan.
Add 2 tablespoons of water and microwave on high for 6 minutes (covered).
Stir the cauliflower and microwave on high again for 6 minutes (covered).
Run steamed cauliflower through food processor (or blender) a piece at a time to puree it.
Add 4 tablespoons cottage cheese, 2 ounces of cheese and milk.
Salt and pepper to taste

Serving Size: Makes 6 - 1/2 cup servings
